Karen Stringer surprised Neil & Lottie this morning with a plate of traditional Canadian Oatmeal Rasin Cookies. Karen, who compiles the What’s Ons you hear on the station, has kindly shared the recipe with us and we’re sharing it with you!

Canadian Oatmeal Rasin Cookies
Ingredients
(Canadian recipes use cups. Use an average size straight coffee mug as a measuring jug – one mug = one cup)
½ cup of butter
½ cup of brown sugar, packed
½ cup of white sugar
1 egg
1 teaspoon of vanilla
1 tablespoon of water
1 cup of self-raising flour
½ teaspoon of baking powder
½ teaspoon of baking soda
½ tsp of salt
1 and ½ cups of rolled oats (not instant)
3/4 cup of raisins.
Method
In a large mixing bowl, blend butter with sugars, egg, vanilla, water and stir/beat until smooth.
Add in the flour, salt, baking powder, baking soda and stir till smooth.
Add in the oatmeal and raisins and stir.
Add a little milk if the batter is too thick. It should clump together easily.
Drop medium sized blobs onto an ungreased baking tray and bake in oven at 200 °C, gas mark 6 for 10 to 12 minutes.
Leave to cool before removing from tray.
