Flavour: 19th April 2014 – Royal Tea Party, Tapas & Shoes, Garden Kitchen.

With the Eat Cambridge food & drink event only weeks away, we interview one of the festival’s three main organisers; Caroline Biggs. There are plenty of fringe events too, and in this programme we catch up with a few, including those hosted by Estefania Led Ramos , Stella Pereira, Kyung Lim, Ozzy Beck and Simon Fraser from Hot Numbers.

In addition Nazima Pathan and Aoife Maxwell return with their Spice of the Month, and Cocktail of the Month respectively, and this time around Nazima focuses on Za’atar spice. Finally Andrew Smith from Cambridge Botanical Garden’s Garden Cafe talks to us prior to his opening of the Garden Kitchen cafe bar on Mill Road, which will open during the Eat Cambridge proceedings!

To the right are Arieras, Portuguese lemon-scented crumbly “sand” cookies, part of Stella

Pereira’s fondest childhood memories – the Arieras recipe is taken from her blog; Littlecakepot.

Ingredients

  • 230g Butter (room temperature)
  • 150g Caster Sugar
  • 320g All Purpose flour (sieved)
  • Rind from 1 lemon

Sieve flour & sugar into a large bowl. Using your finger tips, gently rub in butter and lemon rind, until mixture resembles a sandy texture.
Roll together walnut size pieces of cookie mix and place 2cm apart. Chill for 10-15 minutes.
Preheat oven to 180 deg C. Bake cookies for 20 minutes at 160deg C. Do not allow the cookies to darken in the oven.

You may dust with cinnamon and icing sugar once they have cooled down (Recipe adapted from ‘Cozinha Tradicional Portuguesa’ by Maria de Lourdes Modesto).

The Garden Kitchen is opening on Mill Road very shortly. Andrew Smith and co. are working very hard to get everything looking just right (and in time for Eat Cambridge).
