- When 80% of a country is mountainous you’ve certainly got to work some to fit in a few vineyards! Ten years ago Tom Lewis discovered Austrian wines, the country produces all manner of finely-made white, red and dessert varieties. Together he and Alan Alder discuss the rich and diverse landscape of Austrian tipples.
- What’s the busiest day of the week for a baker? What does ‘Artisanal’ mean, and have you ever tried a walnut fegausse? Matt chats with Alan Ackroyd of Cobs Bakery; who produce the best in bread, reviving an old process that employs long, slow fermentation, giving the yeast time to bring out the best in their selected quality flours (Part 2 of a 2-part interview).
- Food science involves flavour, taste, colour & texture; food biochemistry. These elements serve as vital indicators for manufacturers, chefs, product development and food health & safety specialists. In the last episode we asked for your questions, and today Alan Alder puts them to Food Scientist Dr. Sue Bailey to provide us with some culinary enlightenment.
- Your favourite biscuits and a nice cup of tea, what could be better? Matt interviews Rachel Hewlett of The Biscuit Jar, a company specialising in custom designed biscuits for any occasion.
- You may have seen the colourful plasticine characters in the NHS’s Change 4 Life adverts on television, but did you know there are already affiliated ‘Cook for Life’ classes running in Cambridge? Matt drops in on the first of such courses at Coleridge Community College to chat with course leader Teresa Lawson and one of her students to see the skills he’s acquired.

– 17th March 2012: We visit Sticky Beaks cafe, attend a pie & mash evening at Urban Larder, chat with Colin Joyce the market co-ordinator from Cambridge City Council, and ‘Clueless in the Kitchen’ celebrates St. David’s day a month late by making a leek pie!
